What is Vitamin C?

Vitamin C is a water-soluble vitamin, discovered in 1930 by Hungarian researcher Albert Szent-Györgyi. Being water-soluble means that this vitamin must be supplied to the body every day, since any extra is lost in the urine. Our main source is from fruits and vegetables. A lack of Vitamin C produces the ailment known as scurvy, which was a frequent complaint among sailors until sources of Vitamin C began to be carried on board. Since one of these onboard sources was limes, British sailors have sometimes been called “Limeys.”

Benefits of Vitamin C

Vitamin C is a powerful antioxidant, fighting oxidative stress, and reduces tiredness or fatigue.  It also plays an essential part in:

Vitamin C in the Kitchen

Ascorbic acid (Vitamin C) may be added to foods to combat aflatoxin (produced by fungi that grow on some agricultural crops). Add a pinch to a quarter teaspoon to honey, molasses, jams, maple syrup, peanut butter and other nut butters, cooked foods, homemade baked goods, soaking water for dried fruit and nuts, etc.
