Description
Found in citrus fruits and green vegetables, Vitamin C is a highly effective antioxidant. Even in small amounts Vitamin C can protect essential molecules in the body from damage by free radicals.
Vitamin C has been found to help with these functions:
- Protecting proteins, lipids (fats), carbohydrates, nucleic acids, and other indispensable molecules from damage, by scavenging free radicals
- Protecting tissues from oxidative stress
- Promoting the absorption of iron
- Making possible the formation of collagen, the connective tissue that supports arterial walls, skin, bones, and teeth
What Happens Without Vitamin C?
Severe Vitamin C deficiency has been known for many centuries to cause the potentially fatal disease, scurvy. English sailors were known as Limeys because they carried limes on board ships to protect against scurvy.
Today, scurvy is rare in developed countries because it can be prevented by as little as 10 mg of Vitamin C daily.
